    Back in the Running Game

    Is everyone having a good Saturday? Last night Chris and I made our weekly vegan meal (part of our green challenge). I realized that I eat vegan meals way more than once a week! Last night we made vegan eggplant parm by simply leaving out the cheese. And we had a side salad! This eggplant is amazing. And it makes making eggplant parm SO EASY! We also utilized our other green challenge by drinking some New York wine with dinner! Bully Hill is a really popular New York wine. And its pretty cheap too.     Celebrations

    This weekend has been filled with celebration! And we’re just getting started! Friday night Chris and I went out with a group of his grad school friends to celebrate his Comp Defense. He passed so we had lots to celebrate! Congrats Chris! We took up two big tables at the Pump Station. I got an Apple Ale–my favorite–to celebrate! For dinner I wanted to get something I haven’t tried before so I went with the Black Bean & Corn Veggie Burger.     Typical Sunday

    So far my Sunday has been pretty typical. I love when my Sundays consist of relaxing + a longish run. 🙂 This morning started out with some breakfast that I got at the Fresh Market the other day. The serving size for these waffles was weird-210 calories for 3 waffles. But then I opened the package and they were kind of small, so I only had two, drizzled with apple butter and a little bit of almond butter. They were light and fluffy!     Entering into Double Digits: A New PDR

    So, today I finally went THERE. I’ve ran the furthest I’ve ever ran in my life, setting a new Personal Distance Record (PDR), and entering into the double digit territory. It took me 1 hour and 42 minutes to complete ten long miles. I only took one break after mile six to get some Clif Energy Gel and water because I so tired and completely beat. I honestly didn’t think I would finish. I thought about stopping after mile six and calling it a day. But I wanted to see TEN MILES on my GPS so BAD!!!
