Making A Salad to Go
I’ll have to admit that when marathon training, the last thing I want to eat is a huge bowl of salad…since I usually crave carbs 90% of the time when I’m training. But with my mileage down lately because of my foot injury, I’ve been trying to eat a lot more greens and vegetables. I’ve been enjoying large salads for lunch every day and I feel so much better about getting my veggies in! Detox Day 1
I mentioned in an earlier post that I wanted to begin a detox for the new year! I came across one that sounded like it was actually do-able in my sister’s cookbook, Cooking with Trader Joe’s: Skinny Dish. Some of basic rules are outlined as follows: Consume only liquids (green juices, non diary smoothies, herbal tea, water) and raw fruits & veggies until noon every day. Drink LOTS of water throughout the day. Eat lots of raw fruits & veggies, allow raw nuts and seeds (1/2 cup every day) and cooked whole grains (2 cups total). Avoid gluten (wheat, barley & rye) completely. Include a daily multivitamin Avoid all dairy…

Season for Salads
Spring is here, and you know what that means! Its salad season! In the winter I hate eating salads for some reason. They just never appeal to me! But once warmer weather hits I’m craving them, especially lately. I enjoy eating salads much more when I top them with things I really love eating. Of course, veggies like carrots, broccoli and spinach are must-adds. But here are the things to throw into a salad to spruce it up: Strawberries Pecans or walnuts Craisins Grilled tofu Chickpeas Raspberry balsamic dressing Goat or Feta cheese I love adding strawberries to my salad. Surprise! A Friday Post!! I didn’t think I’d have enough time/anything interesting to write about today but I do! Lets start with last night. I spent the evening gallivanting around Lark Street after work. I was supposed to meet up with a bunch of friends for my friend’s 25th birthday celebration at 9pm, but I was super super hungry after work.
