    Three Things Thursday

    1. It is almost the weekend. It is Thursday. this means its one day closer to the Friday. 🙂 I have a low-key weekend planned which may include brunch at my favorite bakery with Chris, along with a half marathon on Sunday where I can finally sleep in my own bed the night before.     Fall Recipe Roundup

    I don’t have that many recipes…I’m usually terrible at coming up with them and most of the time they are smoothies. But anyway, I do have some fall recipes that I love and I’m working on creating more dishes for my small recipe page! Here are my favorite fall recipes so far!     The Dreaded Snowfall

    Yesterday was the start of something I dread every fall–the first snowfall! It’s too soon, I tell you, too soon! I miss my crisp, cool sweatshirt weather, falling leaves and dry sidewalks–perfect for running! I don’t want to run in slushy a wet mess! Boo! I’ll be happy if this is only snow we get for the rest of the winter! 🙂 But I know that is just wishful thinking. This morning I started my day with a bowl of pumpkin pie oats, instead of steel-cut I used regular rolled oats, and it was just as tasty.     Pumpkin Pie Steel-Cut Oats

    Last night I was on a roll in the kitchen and whipped up a big batch of Steel-Cut Oats, Irish Style, for the week! (Wondering what steel-cut oats are? Check out my previous post all about oats.) They are really super easy to make and much more creamier than rolled oats. Since I wasn’t a huge fan of pure pumpkin in my oats (gasp!), I tried pumpkin butter, and it was amazing!! Pumpkin Pie Steel-Cut Oats Ingredients 1/4 cup of steel-cut oats, already prepared according to package 1 TBSP of pumpkin butter 1/2 banana, mashed (optional, you could add in a nut butter instead) 1 TBSP of chopped pecans Sprinkle…
