    Pumpkin Pie Steel-Cut Oats

Last night I was on a roll in the kitchen and whipped up a big batch of Steel-Cut Oats, Irish Style, for the week! (Wondering what steel-cut oats are? Check out my previous post all about oats.) They are really super easy to make and much more creamier than rolled oats. Since I wasn’t a huge fan of pure pumpkin in my oats (gasp!), I tried pumpkin butter, and it was amazing!! Pumpkin Pie Steel-Cut Oats Ingredients 1/4 cup of steel-cut oats, already prepared according to package 1 TBSP of pumpkin butter 1/2 banana, mashed (optional, you could add in a nut butter instead) 1 TBSP of chopped pecans Sprinkle…

    Bros Fish Tacos

Last night I tried Fish Tacos for the first time ever!!! But I will talk more about that in a little bit. 😉 First, lets discuss last night’s five miler. My training plan called for a five mile speed workout. I’ve only ever done speedwork on the treadmill, and I really wanted to incorporate it into my outside run tonight. I think I did a pretty good job! Chris was my running buddy and we tackled 5.16 miles in 50:41. Stats Total Distance – 5.16 miles Total Elapsed Time – 50:41 Average Pace – 9:45 Average Speed – 6.1 mph Calories Burned – 607 Splits Mile 1 – 10:08 Mile…

    A Summery Dinner

Look what I finally picked up today!! Caitlin‘s book! I’m soooo excited! I love the whole idea behind Operation Beautiful. You can read more about it on the website. I think this book may help me, actually, because I know I’m guilty of “fat talk” every once in a while (what girl isn’t) because I’ve struggled with a negative self-image for most of my life. I’m slowly learning how to ban fat talk, but it is difficult, I will admit.  Anyway, I can’t wait to read the book. 🙂 Since I’m still pretty low on food due to lack of groceries, I had oatmeal this morning. Never a bad thing.…

    Oats, Glorious Oats

Someone recently told me I should write a post all about OATS. As many of you are probably aware, oats are a pretty much a staple food in the Healthy Living Blog community. But for those of you who are new to this, I decided to write a post all about one of my favorite foods…OATS!!! Until I discovered the blog world, to me, all oatmeal was were tiny packets, that came in boxes like this: And then I finally saw the light! There is certainly nothing wrong with pre-packaged instant oatmeal, it is still healthy, but I since discovering real oatmeal, I love it so much more! There are…

    Still Fighting that Cold

Well, I am now day three into my cold. I think I may be getting a bit better, or it might just be the cold medicine I’ve been taking. I made a dumb decision last night and ran two miles  in 23 minutes on the treadmill, even though I felt a little bit better… I probably should have just lied in bed instead. What I want to know is how I got so sick! I haven’t gotten a cold this bad in almost two years…why all of a sudden am I getting sick the week of my longest race? It’s not fair. While I was resting up last night I…
