    The past few days have been HOT! I’ve surprised myself though, and got up earlier than normal to get my runs done in the AM when its not so hot out. 90+ degrees after work = no running for me.     Summer Recipes

    After two years of blogging, I have a small collection of my go-to recipes that I post every once in a while. I tried to find the best ones for summer–I’ll admit, I looked back on some of my old posts and was horrified at the photography (I’m still not that great at photographing food, but I think I’ve gotten a bit better since then.)     Healthy Apple Butter-Filled Muffins

    I’m impatient. Its only June and I’m already dreaming of fall. I know, I know, but its my favorite season! So, I still had some home made apple butter in my pantry from last fall and I wanted to use it up…so why wait? I’m the girl who eats pumpkin butter in April..anyway…I found this recipe for apple butter-filled muffins and it looked delightful.     Fruity Strawberry Protein Smoothie

    The other morning before work I decided to go for my run. Normally I run after work so it was a nice change to get it out of the way. All throughout I was daydreaming about the smoothie I wanted to make when I was done. I had some pineapple juice and figured that would be a great addition to my normal protein smoothie…it made it so refreshing! This smoothie is a perfect post-workout breakfast. Ingredients 1/2 cup soy milk 1/2 cup pineapple juice 1 scoop brown rice protein powder 1/2 banana (fresh or frozen) 5 large frozen strawberries Instructions Throw all ingredients into blender and blend well Enjoy!

    Veggie Pasta Casserole

    If you know me, you know I like really quick and easy dinners. The last thing I want to do when I get home from work and the gym is to spend time cooking dinner, especially when I’m starving!
