Home-Made Salsa Verde
Yesterday we got our 15th box of CSA vegetables. Can you believe it’s already been FIFTEEN weeks since we stared? We’ve gotten some delicious things. This week we got cilantro, onions, tomatillos, tomatoes, garlic, arugula and some beets! Well, more than half of those ingredients just call for tacos, no? I decided to make salsa verde for the first time to add to our fish tacos last night! I just googled salsa verde and found a bunch of easy recipes. It was really easy and it came out tasting GREAT! Local Food for Dinner
Yesterday we made out great with our CSA box, the weekly box of vegetables we get from Otter Hook Farms in Greenville. In yesterday’s box: Swiss chard Basil Sweet corn Parsley Tomatoes Beans So, when one has basil, one must make pesto! I made it before to put on pizza and it came out amazing. I used a slightly different recipe this time because I had no nuts on hand. It came out pretty good, although I may have used a little bit too much garlic. CSA Week 5 – Chioggia Beets
Its Week 5 of our CSA already! Time flies, really. Each week we’ve been getting delicious produce! So far we’ve gotten lots of spinach, lettuces, garlic scapes, radishes, broccoli, and beets! This week I got double the vegetables since my friend, who also participates, is on vacation. She let us pick up her share. In this week’s bag: baby bok choy, boy choy, radishes, yellow squash, beets, zucchini, lettuce & snap peas. So far my favorite have been the roasted beet chips we made this week and last. These beets are cool because they are red and white striped! After some googling, I found out they are called Chioggia Beets!…
